Pizza is one of the most loved foods on the planet. But where
did it all begin? The story of pizza is a fascinating journey
through history, culture, and tradition.

Ancient Origins

Flatbreads with toppings have existed for thousands of years
across many cultures — from ancient Egypt to Greece and Rome.
But the pizza we know today was born in Naples, Italy.

Naples: The Birthplace of Modern Pizza

In the 18th and 19th centuries, Naples was a bustling, densely
populated city. Street vendors sold flatbreads topped with
tomatoes, cheese, oil, and garlic to working-class people
looking for a cheap, filling meal. This was the true origin
of pizza.

The Margherita Legend

In 1889, pizza maker Raffaele Esposito created a special pizza
for Queen Margherita of Savoy. He topped it with tomatoes,
mozzarella, and fresh basil — representing the colours of the
Italian flag. The Queen loved it, and the Margherita pizza
was born.

Pizza Goes Global

Italian immigrants brought pizza to the United States in the
late 19th and early 20th centuries. From New York to Chicago,
pizza evolved and adapted to local tastes. Today, pizza is
enjoyed in virtually every country in the world.

Pizza Today

From Neapolitan classics to creative gourmet variations, pizza
continues to evolve. At Champignons, we honour the traditional
roots of Italian pizza while adding our own modern touch.

Because pizza isn’t just food — it’s culture, history,
and community on a plate.

There’s nothing quite like a homemade pizza with the perfect
crust — crispy on the outside, soft and chewy on the inside.
At Champignons, we believe great pizza starts with great dough.
Here’s a look at what makes our dough truly special.

The Ingredients That Matter

The foundation of any great pizza dough is simple: flour, water,
yeast, salt, and olive oil. We use finely milled Italian tipo 00
flour, which gives the dough its smooth, elastic texture.

The Process

Mix 500g of tipo 00 flour with 7g of dry yeast and 10g of salt.

Slowly add 325ml of lukewarm water while mixing.

Add 2 tablespoons of extra virgin olive oil.

Knead the dough for at least 10 minutes until smooth.

Let it rest and rise for a minimum of 2 hours at room temperature.

The Secret

Patience. Great dough cannot be rushed. For the best results,
let your dough cold-ferment in the fridge overnight. This slow
fermentation develops a deeper flavour and a better crust texture.

Try it at home and taste the difference — or come visit us and
let us do the work for you!
